Dakota: Welcome to the Hometown Trades Journal. I'm Dakota, and Roger's with me.
Roger: And I'm Roger. Fort Smith, Arkansas, is the stop this week, a city of more than ninety thousand people with the Fort Smith Convention Center on South Seventh Street. The topic is catering, and the booking rule comes first: a day's notice, generally.
Dakota: Which kitchen are you covering here?
Roger: R-X Catering N-W-A, a Fayetteville kitchen that delivers to Fort Smith. On the corporate side, the customers are largely pharmaceutical reps, along with clinic and hospital staff. Every dish on the website can be ordered and delivered.
Dakota: Is twenty-four hours really enough for an early meeting?
Roger: For an early start, two days is safer, and say what time people sit down. Same-day orders can be accommodated if the schedule allows. Weekdays the kitchen is open from six-thirty to five, Saturdays from seven to three, and it's closed Sunday.
Dakota: What does one person's lunch run?
Roger: The box lunch, a wrap, chips, a cookie and a fruit bowl, and the Works Platter both start at thirteen dollars and forty-nine cents a person, with a ten-person minimum. The hot breakfast special starts at thirteen ninety-nine. Entrees run from fourteen ninety-nine for B-B-Q pork or chicken enchiladas up to sixteen ninety-nine for beef brisket. On hot meals, serving utensils, plates, napkins and cutlery are included. Dakota, what's priced by the tray?
Dakota: Java Boxes start at twenty-five dollars and serve twelve. Fruit trays run sixty-two ninety-nine for a small, up to ten guests, and eighty-two ninety-nine for a large, up to twenty-eight. Banana pudding shooters are three dollars and fifty cents each.
Roger: How do you choose between kitchens?
Dakota: Look for a kitchen that posts its dishes and prices, then ask how much warning it needs, how the food arrives, and whether delivery is included. Reviews help too. Bernie, a pharma rep covering Northwest Arkansas, wrote in a review, "I need a caterer who makes me look good to my clients."
Roger: And what belongs on the credentials list?
Dakota: A-D-H certification and membership in the Arkansas Restaurant Association. Together, the team of former pharmaceutical reps and executive chefs brings sixty-plus years of experience. In twenty twenty-four the company landed on the finalist lists for Best Caterer at A-Y Magazine and the Arkansas Times.
Roger: What changes between an office lunch and an event?
Dakota: Office lunches arrive ready to serve, packed in insulated carriers. Event orders bring chafing dishes, and those get set up on site. A big room needs a plan: the Convention Center's exhibit halls divide into five sections, so name the sections you're using and where the tables go.
Roger: Give me a Fort Smith morning that shows it.
Dakota: Denise, an office manager at a Fort Smith freight office, had thirty people coming to an annual safety training, a Wednesday start at seven-thirty. A hotel quote for that morning came back well over budget, so on Monday she called R-X Catering N-W-A.
Roger: What did she order, and what did it cost?
Dakota: Thirty hot breakfast specials at thirteen ninety-nine each, and three Java Boxes at twenty-five dollars each. The food totaled four hundred ninety-four dollars and seventy cents, before tax. Everything was set up and ready before the first session, the training started on time, and nobody had to leave for coffee.
Roger: What does someone ordering in Fort Smith do first?
Dakota: Ask a day ahead, or two days for an early start, and tell the kitchen when people sit down. Count heads first, then pick carriers or chafing dishes to suit the space. The kitchen to call is R-X Catering N-W-A, in Fayetteville, Arkansas, delivering to Fort Smith. Call four seven nine, five oh two, nine eight seven nine, or visit R-X catering dot net. That's catering for Fort Smith, Arkansas. That's the Hometown Trades Journal. New episodes every week. Thanks for listening.
